I make these on the grill on cedar planks, but I suppose you could broil/bake them.

First season with salt, pepper, garlic powder if you like. Then brush on dijon mustard. Eventually, sprinkle with brown sugar. They come out great.

I usually grill salmon, but this would function in an oven as properly.

I sprinkle them lightly with salt and pepper, and a little Old Bay Seasoning. Then, I brush them with true maple syrup that can make a glaze as it cooks.

Ingredients: 15.75 oz. can pink salmon (drained) 2 eggs, well beaten 2 tablespoons dried chopped onion 1/3 inner packet of saltine crackers, finely crushed olive oil for sauteing Beat the 2 eggs well. Add the drained salmon, 2 tablespoons dried chopped onion and the 1/3 inner packet of finely crushed saltine crackers. (You can crush the crackers by placing them in a zip-lock plastic bag, closing it, and going over the bag with a rolling pin, until all crackers are well crushed.) Stir these ingredients together until they are completely mixed. Put about 1 tablespoon of olive or other cooking oil into a skillet on the stove. Bring it to medium heat, and start adding the salmon cakes. You may drop them by spoonfuls, and flatten them out (quickest), or use your hands to form them into circular patties. Keep the heat at a level where the patties are frying well. Turn the patties as they become golden on the bottom side. It will only take about 5 minutes (or less) per side. Transfer the cooked salmon cakes to a tray with paper toweling to absorb any extra oil. Then, place the salmon cakes on a serving dish. Serve while hot! This is one of those recipes you’ve just got to have in your collection!

Ingredients

DIRECTIONS
In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper.
Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning when.
Preheat oven to 400 degrees F (200 degrees C).
Spot the baking dish in the preheated oven, and bake salmon uncovered 20 minutes, or until finally very easily flaked with a fork.

Salmon with Pecan Honey Glaze

Components
1 cup pecan halves or pieces
1 cup honey
3/four cup butter
1/4 cup vegetable oil
4 (6 ounce) fillets salmon
salt and pepper to taste

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Spread pecans in a single layer on a baking sheet. Bake eight to 10 minutes, or till slightly browned. Stir two or 3 times to toast uniformly.
In a modest saucepan over medium-higher heat, combine honey with half of the butter. Stir in the toasted pecans, and cook for 8 to 10 minutes to infuse the flavors. Take away from heat, and preserve warm.
Melt remaining butter with oil in a large skillet above high heat. Season fish with salt and pepper. Arrange fillets in skillet, and cook right up until firm to the touch, about 4 to 5 minutes per side. Salmon is done when it flakes very easily with a fork. Transfer to serving plate, and spoon glaze over leading.

Salmon with Dijon Cream Sauce

Ingredients
two pounds salmon fillets
1/2 cup sour cream
1/8 teaspoon white pepper
1/eight teaspoon dried dill weed

1/3 cup Chardonnay wine
1 shallot, finely chopped
1 cup half-and-half cream
1/four cup all-goal flour
1 tablespoon Dijon mustard

DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a medium baking dish.
Arrange salmon in the ready baking dish. Evenly coat with sour cream. Season with white pepper and dill.
Bake in the preheated oven 30 minutes, or till fish is very easily flaked with a fork.
In a small saucepan above medium heat, mix the wine and shallot, and bring to a boil. Reduce heat, and simmer ten minutes, until finally liquid is decreased by about 2 tablespoons.
In a small bowl, completely blend the half-and-half and flour, and stir into the wine mixture. Return the mixture to a boil, stirring consistently. Minimize heat, and carry on to cook and stir till thickened.
Take away the wine and cream mixture from heat, and mix in the Dijon mustard. Pour evenly over the salmon to serve.

Salmon: I presume they are fillets – lightly dust with seasoned flour. Saute in butter till just accomplished or the way you like it. Either way, it shouldn’t start off browning anywhere.

Hollandais Sauce
3 egg yolks
1 Tbsp lemon juice
1/2 cup firm butter
stir egg yolks and lemon juice vigorously in 1 1/two quart sauce pan. Add 1/4 cup of the butter. Heat more than very reduced heat stirring consistently with wire whisk right up until butter is melted. Ad remaining butter Continue stirring vigorously till butter is melted and sauce is thickened. Serve hot or at room temp.
