Answer by depp_lover
1/4 c. vegetable oil
10 oz. finely cut onions
1/2 bell pepper, deseeded & crushed
4 lg. cloves of garlic, chopped
1 lb. beef chuck (stew meat, or shank meat)
2 tbsp. Hungarian paprika (don’t use Spanish)
1/4 tsp. black pepper
1/4 tsp. crushed Italian pepper or cayenne
1/2 tsp. caraway seeds
1 (28 oz.) can tomatoes, crushed by hand
2 bay leaves
Salt to taste

For those who can remember, a grating of lemon rind to taste for a finishing touch.
1. Heat the oil in a heavy bottom saucepan or casserole. Add the onions and the bell pepper, cover and sweat onions until translucent, stirring occasionally, but do not brown. Add the garlic and saute until it imparts its aroma.

2. Add the meat, stir together and season with salt. Cover and let sweat gently for several minutes. When meat takes on a cooked appearance, add paprika, caraway seeds, the pepper and the bay leaves, stir all together, cover and let cook on a low fire for 10 to 15 minutes until meat has picked up the flavor of the seasonings.

3. Add the tomatoes, stir and cover and return to a simmer. Adjust fire so the goulash simmers very gently and let cook, stirring occasionally until meat is tender. While the goulash is cooking, taste and adjust the seasoning if needed. Meat should be tender in about one hour.

4. When meat is tender, remove bay leaves and taste once more. Skim any grease that may have surfaced. Keep warm.

I’ve come to find out that goulash is different for many people. The way I make mine…
1# ground beef
1 onion (chopped)
1 can tomatoes
1 8oz package macaroni or spiral pasta

brown the beef and onion till done and add the tomato. Cook pasta per directions and add to the meat mix. You can serve then or let it simmer while you have a glass of wine!!
Fix a toss salad and french/garlic bread and enjoy! You can use Italian tom. for a little more seasoning if you like.

Answer by libbyami
this is made with beef chunks and is really good, but a bit more work than the usual hamburger goulash
Beef Goulash with Dumplings Recipe

Ingredients

Goulash

* 2 Tbsp extra virgin olive oil
* 4 cups onions, thinly sliced
* 1 Tbsp sugar
* 3 garlic cloves, minced
* 1 Tbsp caraway seeds, toasted and ground
* 1 1/2 tablespoons sweet Hungarian paprika
* 1 teaspoon spicy Hungarian paprika
* 2 Tbsp minced fresh marjoram leaves
* 1 teaspoon minced fresh thyme leaves
* 1 bay leaf
* 3 Tbsp tomato paste
* 2 Tbsp balsamic vinegar
* 4 cups chicken stock
* 2 1/2 pounds chuck roast, cut into 2-inch cubes (remove excess fat)
* 1 teaspoon kosher salt
* 1/4 teaspoon freshly ground black pepper

Dumplings

* 2 cups cake flour
* 2 teaspoons baking powder
* 1 teaspoon salt
* 3/4 cup milk
* 2 Tbsp melted butter

Method

1 In a large covered sauté pan, heat the olive oil and sauté the onions and sugar until caramelized. Add the garlic and caraway seed. Cook another minute.

2 Add the sweet and spicy paprika, marjoram, thyme and bay leaf. Sauté another minute, until fragrant.

3 Add the tomato paste. Deglaze with the vinegar and the stock and add the pieces of beef, salt and pepper. Bring to a boil, then lower to a simmer. Cover and cook until very tender, about 1 1/2 hours, stirring occasionally. Taste and adjust seasoning with salt and pepper.

4 To prepare the dumplings, sift together the cake flour, baking powder and salt. Combine with the milk and melted butter, mixing lightly. After the stew has cooked until tender in step 3, drop the dumpling batter by (heaping) teaspoonfuls into the simmering stew. Cover and cook for 15 minutes. Once you have covered the pan, do not uncover while the dumplings are cooking! In order for them to be light and fluffy, they must steam. If you uncover the pan, the steam will escape and the dumplings will boil instead. After 15 minutes, test the dumplings with a toothpick. If the toothpick comes out clean, the dumplings are done.

Serves 4 to 6.

And here is Paula Deens recipe, also very good and pretty simple, but still has a lot of flavor. Don’t worry about the salt like I did, because the macaroni is cooked right in, they absorb much of it,
Bobby’s Goulash

Ingredients:

* 2 lb lean ground beef
* 2 large onion, chopped
* 3 cloves garlic, chopped
* 3 cup water
* 2 (15-ounce) cans tomato sauce
* 2 (15-ounce) cans diced tomatoes
* 2 tablespoon Italian seasoning
* 3 bay leaves
* 3 tablespoon soy sauce
* 1 tablespoon Paula Deen’s House Seasoning
* 1 tablespoon Paula Deen’s Seasoned Salt
* 2 cup elbow macaroni, uncooked

Directions:

In a Dutch oven, saute the ground beef over medium-high heat until no pink remains. Break up the meat while sauteing. Spoon off any grease. Add the onions and garlic to the pot and saute until they are tender, about 5 minutes. Add 3 cups water, along with the tomato sauce, diced tomatoes, Italian seasoning, bay leaves, soy sauce, House Seasoning, and seasoned salt. Stir well. Place a lid on the pot and allow this to cook for 15 to 20 minutes. Add the elbow macaroni, stir well, return the lid to the pot, and simmer for about 30 minutes. Turn off the heat, remove the bay leaves, and allow the mixture to sit about 30 minutes more before serving. Serve with garlic bread and a salad.

Prep Time: 15 minutes
Cook Time: 1 hour 35 minutes
Difficulty: Easy
Yield: 6 servings (unless Bobby’s eating, then only 3 servings)

simple recipe for goulash: Goulash or Soljanka?
How hard is to make goulash? soljanka? Does anyone have any recipes for either or both of these? I am able to control a stove but I am far from a pro so I do need a simple and quick recipe. Also are tgese foods that can be made in advance and frozen until it is needed?
Also, what drink would go best with either/both of these dishes?

The following is the answer: (Hint: The correct answer provided by the users, does not guarantee the right.)

Answer by want2quit
Goulash is pretty simple. I use 1 lb of ground beef and 1 medium onion (chopped), 1 lb box of shells or elbow macaroni (i prefer small shells), 1 can of tomato juice or V-8, approx 1/2 stick of butter or margarine, and approx 1 cup of sugar. Brown beef & onions and drain grease. Cook box of mac according to directions and drain. Add butter, sugar, beef and onions and enough tomato juice to cover macaroni. It’s personal preference but i usually pour out about a glass of juice and use the rest in the goulash. Can also use less sugar depending on your tastes. Fast and simple meal. This makes quite a bit. I usually eat it that night and save a bowl for the next day. There’s usually enough to freeze about 4 or 5 bowls to. It freezes well and goes straight into the microwave (using micro safe bowls). Good Luck.

I love Goulash and it’s not terribly difficult to make.

Goulash Stew
Serves: 6 Active Time: 25 min Total Time: 1 hour to 45 min
Grated zest and juice of 1 lemon (2-3 Tbsp juice)
1 tsp Herbes de Provence
1 tsp caraway seeds
2 bay leaves
Cheesecloth
1 1/2 lbs beef, pork, or veal stew meat
4 Tbsp Wondra Flour (or similar), divided
1/4 cup olive oil
2 large Onions, chopped
3 cloves garlic minced or pressed through garlic press
2 Tbsp Hungarian paprika (sweet not hot)
1/2 cup white wine
1 can (14.5 oz) Reduced Sodium Chicken Broth
Salt and pepper to taste
4 oz (1/2 cup) creme fraiche or light sour cream

Preheat oven to 350 degrees.

Combine lemon zest, herbes, caraway seeds, and bay leaves on 6-inch cheesecloth square; tie with twine to make a “sachet.”

Dust meat with about 2 Tbsp flour; pat off excess.

Heat oil in large braising pan on MEDIUM-HIGH, until oil faintly smokes. Add meat; brown, turning to brown all sides, 7-10 min. Remove meat from pan; set aside. Discard all but 1 Tbsp drippings from pan.

Reduce heat to MEDIUM. Add onions; cook 7-10 min, stirring occasionally. Add garlic; cook 2-3 min to brown slightly. Add paprika; cook, stirring, 1 min.

Add wine, stirring to loosen browned bits on bottom of pan. Simmer 1-2 min, until almost dry. Return meat to pan; add broth and herb sachet. Heat to simmering; cover.

Braise on center rack of oven until fork-tender, 40-45 min.

Remove pan from oven; carefully remove lid. Discard sachet. Heat to simmering on MEDIUM-HIGH.

Skim fat from surface of sauce and discard. Whisk remaining flour into goulash; simmer on HIGH stirring, about 5 min. Season to taste with salt and pepper. Finish with a little lemon juice. Top each serving with a dollop of creme fraiche or sour cream.

Serve with Spaetzle. Black Forest Girl brand is my favorite but Maggi makes some that tend to be easier to find at your local grocery store.

I’ve never done it, but I believe you could make and freeze the stew in advance. The Spaetzles need to be prepared just prior to eating, but they don’t take anymore effort than pasta or rice.

You could drink this with a light-bodied red wine but I prefer a nice beer with mine.

simple recipe for goulash: Recipe for Hungarian Goulash?
My mom used to make this growing up & I love it, I’d like to find a simple but phenominal recipe for homemade hungarian goulash.

The following is the answer: (Hint: The answer is not necessarily.)

Answer by dragonslayer_74
Believe it or not, I had this only a couple of months ago for the first time. I printed out the recipe, but also saved it in my doc folders. Here is the recipe I have:

John’s Hungarian Goulash over Macaroni noodles

1 lb. beef, cut into cubes
2 tbsp. brown sugar
3 tbsp. Worcestershire sauce
6 tbsp. ketchup
3 tbsp. flour
2 med. onions, minced
1 1/4 tsp. paprika
1 1/4 tsp. salt
3/4 tsp. vinegar
1 1/2 c. water
1 (6 oz.) pkgs. noodles (I used macaroni noodles)

Brown meat on all sides in fry pan; add onions. Combine paprika, brown sugar and salt. Combine Worcestershire sauce, vinegar, ketchup; add to meat; add 1 cup of the water; stir; cover. Cook over low heat 2 1/2 hours or until meat is very tender. Blend flour with remaining 1/2 cup water; add to meat mixture; stir until thickened. Boil noodles in salted water until tender; drain. Serve meat mixture over noodles.

Answer by MrM
Hungarian Goulash is kind of like Speghetti Sauce, everyone has their own recipie.

Here’s one I like:
Homemade Beef Broth if you can get it
7 bone chuck steak
Two red bell peppers
Two onion, chopped
Two carrots, chopped into small bits
4-5 cloves of garlic, minced
Can of tomatoes or 1/2 cup red wine vinegar
Spice Mix: Tblespoon each of Hungarian Paprika, Cayenne Pepper, Black Pepper, Marjorum, Thyme

Put butter or oil in a dutch oven. Fry chuck steak on both sides for a minute on high each side (until browned).

In left over oil and drippings from the meat, put in onions, carrots, and peppers. Fry for about 5 minutes until they caramelize.

Put in garlic and cook till the garlic turns golden (be careful not to burn it).

Put in Spice Mix. Stir until fragrant.

Put in meat. Cover with stock. Pour in canned tomatoes. Stew until meat is tender (2 hours or so depending on meat toughness) When meat is done, pull from bones and discard bones.

Get some potatoes or some of your mom’s elbow macaroni. Or use egg noodles. Put it in the Goulash.

Cook potatoes or pasta until done.

Stir in a mixture of flour and water and cook a minute or two to thicken a bit.

Serve with a large amount of Hungarian Paprika on the top.

Eat with wonderful crusty bread on a cold night!

GRANDPA’S HUNGARIAN GOULASH

2 1/2 lbs beef stew meat
1 bell pepper (chopped)
2 slices of bacon (chopped coarsely)
1 small onion (chopped)
sweet Hungarian paprika
1/2 cup dry white wine
salt
pepper
beef bouillon cubes, to taste
1 package egg noodles

Brown bacon, remove and set aside, draining all but 1-2 tablespoons. Brown beef in remaining 1-2 tablespoons of bacon fat (olive oil may be substituted), then remove, drain.
Cook onion and bell pepper until soft. Add browned beef. Add wine, salt, pepper, and paprika (about 1/4 teaspoon, or to your taste).

Continue to taste and adjust seasonings throughout the cooking process, (especially paprika). Cover and cook on low or medium, adding water as needed. Stir in 1 beef bouillon cube per cup of water added (more or less, to your taste).

Best if beef is cooked all day, at least 4 hours. When beef is ready, cook egg noodles according to package directions. Remove meat and set aside.

Thicken gravy with flour. Add beef to gravy and serve over egg noodles.

Note: Beef soupbase or beef stock may be used in place of the bouillon, if available.

Answer by zoril
Hungarian golash does not contain stewed tomatoes or ground beef. That is simply golash.

Hungarian golash contains chunks of stew meat in a seasoned brown gravy and it is placed over egg noodles.

I have lived in many different parts of America and have found out that Goulash, means a lot of different things. Now the kind of goulash your talking about is the kind my step-mom used to make. You have the right ingrediants listed, just add some cheeses and spices (oregano, basil, garlic, onions, etc.) – it’s a by taste recipe!

Answer by Jen
PORK GOULASH

3 pounds boneless pork
1 tablespoon olive oil
2 slices bacon, plus drippings
4 large onions, thinly sliced
2 cloves garlic, minced
2 tablespoons Hungarian sweet paprika
2 tablespoons wine or cider vinegar
1 tablespoon caraway seed
2 cups beef or pork broth
1-2 tablespoons Wondra flour
1/2 cup sour cream

This traditional Hungarian dish can now be made in slow cookers. If you don’t have one of the ones with a removable liner for browning, start it off in a heavy skillet and transfer it to a Crock-Pot, or just make it the old-fashioned way in a heavy cast iron Dutch oven. Great for camp fire cooking!
Cut pork into 2 inch cubes, removing all traces of fat. Heat bacon in a heavy dutch oven until crunchy, then crumble. In same skillet, saute onions and cook, stirring constantly for 3-4 minutes of until soft and golden. Add garlic and paprika; cook, stirring for 2 more minutes (do not let garlic brown).

Add vinegar, pork, salt and caraway seed, stirring well. Add enough broth to barely cover the pork. Reduce heat to low setting and simmer, stirring occasionally, for about 1 hour or until pork is almost, but not quite tender.

To thicken, stir in Wondra flour. Add sour cream; stir well.

Cover; simmer for 20 minutes, or until meat is tender. The sauce should have a consistency similar to heavy cream. If the sauce is too thin, cook without cover until sauce has thickened; if too thick, add a small amount of broth.

Serve with boiled baby potatoes or over buttered noodles or steamed rice.

About 6 servings.

OR

BEEF GOULASH WITH NOODLES

1 large onion
2 lbs beef chuck
4 tbsp flour
2 cloves garlic, chopped
1 1/2 cups beef or chicken broth
1/2 cup water
1/4 tsp pepper and 1tsp salt
3 tsp red vinegar
2 bay leaves
3 tablespoons oil
1 tablespoon paprika
1 pkg egg noodles

In 4 quart pot, sauté onions in oil for about 3 minutes or until they become soft. Meanwhile, dredge meat in flour.
Sauté on both sides until brown; add remaining ingredients. Cover pot and simmer or low flame and cook for 90 minutes. Serve over cooked noodles.

Answer by stargazer
Forget the homemade stuff,girl. Here’s the original Hungarian recipe.,delicious and very easy to make as how all stews are supposed to be.

Diced beef (ask for stew beef) – 3 lbs
Canned Tomatoes – 1 lb
Onions – 1/2 lb
garlic – 1 clove
Potatoes – 1 3/4 lb
Water – 2 1/2 cups
Hungarian or any sweet paprika – 1 Tbs
Salt & Pepper to taste
Beef stock ( a cube of bouillon paste to 5 cups water)
(Adjust recipe accordingly to suit your covers)

Heat up around 100 ml oil in casserole or non stick pot,
Fry the diced beef, add chopped onions, till both are brown,
Add crushed garlic,crushed tomatoes. Stir them in. Add paprika. Give a good stir. Add enough beef stock to cover meat. Bring to boil . Then cover and simmer over low heat for about 2 hrs or till the meat is almost tender.Add in oregano and any herbs you like,just to enhance the flavour, and seasoning.
(Go watch your favorite TV program or do other chores)
Add around 2 1/2 cups hot water.
Add the peeled diced potatoes, bring to boil, simmer another 30 mins or till potatoes are soft.
Goes well with pasta,bread or rice. Tastes even better overnite and with a glass of red. Enjoy!
