Try the recipe in “Joy of cooking” or “Betty Crocker” cookbooks. They both have standard recipes. Cook on medium heat and remember the first pancake is usually not pretty ( so the second one is the one some one eats).

Chocolate Zabaglione (Serves 4)

Ingredients:
4 egg yolks
4 tbsp caster sugar
50g / 2oz dark chocolate
8 amaretti biscuits (2 per serving)

Instructions:
1) Put egg yolks and caster sugar into a large glass bowl and, using an electric whisk, beat together until mixture is very pale.
2) Finely grate the chocolate into the bowl, then fold into mixture.
3) Place the bowl over a pan of gently simmering water and set the electric whisk on the lowest setting. Cook gently, whisking continually, until the mixture thickens. Take care not to overcook, or the mixture will curdle.
4) Spoon the hot mixture into pre-warmed glass dishes, or Coffee cups if you want, and serve the Zabaglione as soon as possible, while it is still warm, light and fluffy. Serve on saucers, accompanied by the amaretti biscuits.

Top Tip:
Make the dessert just before serving, as it will separate if left to stand. If it begins to curdle, remove from the heat immediately and put into bowl of cold water to stop it cooking. Whisk furiously until the mixture comes back together.

Summer Pudding (Serves 6)

Ingredients:
1 tbsp of oil or butter (for greasing moulds)
6-8 thin slices of white bread, crusts removed
175g / 6oz Caster sugar
300ml / 10fl-oz water
225g / 8oz strawberries
500g / 1lb, 2oz raspberries
175g / 6oz blackcurrants (and/or redcurrants)
175g / 6oz balckberries (and/or loganberries)
1 med tub of single cream, to serve

Instructions:
1) Grease 6 150ml / 5fl-oz moulds with the oil or butter.
2) Line each mould with the bread, cutting the slices to fit snugly.
3) Put the sugar in a small pan with the water and heat gently, stirring until the all the sugar has dissolved. Bring to the boil over a high heat, and continue to boil for 2 minutes. Creating a light syrup.
4) Reserve 6 large strawberries for the decoration. Add half the raspberries and the rest of the fruit to the syrup, cutting the remaining strawberries in half if large. Reduce to a simmer, gently cooking for a few minutes, until the fruit soften but still retain their shape.
5) Spoon the fruit mixture and some of the liquid into the moulds, almost to the top. Cover with more slice of bread, then spoon a little more of the liquid into the moulds, so the bread is soaked.
6) Cover each mould with a saucer and weight them down, leave to cool, then chill thoroughly in the fridge, preferably overnight.
7) Put the remaining raspberries into a blender, and pulse til smooth. This is probably best left until you are ready to serve the puddings.

When serving, invert each mould & saucer. Spoon the raspberry sauce over the top. Decorate with the large strawberries, and serve with cream.

Question: thumbprint cookie recipe?
I am looking for a recipe for a quick and simple (kid friendly) recipe for thumbprint cookies. the ones that are like sugar cookies ? that you fill with jam. they have to be WITH OUT nuts.

I tried google and yahoo search and came up with nothing so please don’t suggest that.

I know there has to be a recipe like this out there because i remember making it a few times when i was a teenager and i never had to seperate eggs and there were no nuts you just mixed it all up and droped it on a pan, and then i think you baked it a while and then filled them and then baked it a while longer, but its been a while so i might be a little off on when you filled them and stuff.

Thanks for your help, I really want this recipe, I am babysitting tomarrow and the girls really want me to teach them to bake.
I already tried the recipe sites and couldn’t find it and it HAS to be without nuts and easy (no seperating eggs) and it is made from scratch not a tube. please read questions before answering.

1 cup butter or margarine, softened
3/4 cup sugar
2 large eggs, whites and yolks separated and reserved
1 teaspoon vanilla extract
2 cups flour
1/4 teaspoon salt
1-1/4 cups finely chopped nuts

Add other cup of flour gradually. Cover and chill at least 1 hour or overnight. Also make sure reserved egg whites are covered and refrigerated, too.
Preheat oven to 350 degrees F. Very lightly grease 2 cookie sheets. Set counter for the rolling process by setting out low-sided bowl with lightly beaten and reserved egg whites and another low-sided bowl for the nuts. Roll dough into 1 to 1-1/2 inch balls. Then roll each ball into egg white and then nuts. Place on cookie sheets 2 inches apart. Press thumb into each cookie before baking. Bake for 15 minutes. Cool 1 minute on cookie sheet. Move to wire racks for cooling. Press centers again with thumb. When cookies are almost cool, fill centers with jam.
