Today you’ll learn how to make some great dips, sides and finger foods for all your summer entertaining. These flavorful dishes will fill you up, satisfy you and help you avoid diet disaster! We’ll learn a plethora of low-cal dishes that travel well (for parties on-the-go) and can be made ahead of time (to get you out of the kitchen faster).

Here to show us how it’s done is our very own Dean of Deliciousness, Rachel Ciordas. Rachel’s popular healthy cooking classes are geared for those of us watching our weight and looking for healthy alternatives. Turkey tandoori flavored burger, with rosemary roasted potatoes.

Recipe-
3/4 cup chicken broth
1/2 lb ground turkey
1/2 tablespoon Tandoori seasoning
1 tsp curry paste or powder
Sprinkle of fish sauce
Squeeze of lemon
1 egg
Handful of bread crumbs, panko preferred.

Mix all wet ingredients, mixture will be very wet. Add handful of panko crumbs, or just until it comes together. Form individual burgers.
Cook until brown, flip, brown again.
With heat at medium, pour in broth, cover and cook 8 minutes until done, checking to insure burgers do not stick. They will puff up! This is the magic of covering with broth. Dreamy, cloud-puff soft burgers of weightlessness!
Remove lid, check for done-ness, and reduce liquid, flipping burgers once.

Add cheese of your fancy, or not, serve on buns with a dollop of sour cream. In this image, we’ve used ciabatta bread. Mmm.

Roasted potatoes are simple – quarter young red potatoes, skin on, cover with approx 1 tbs olive oil, touch of lemon juice, sprinkle of basil, savory, and rosemary dried seasonings, touch of salt & pepper, roast for 20mins, turning once, in a 450 degree oven.

INGREDIENTS:

* 3 pounds potatoes, cooked, peeled, and cubed
* 1 large green bell pepper, chopped
* 1 medium onion, chopped
* 1 to 2 tsp onion salt, to taste
* 1/2 teaspoon celery seed
* pepper, to taste
* 1/3 cup cider vinegar
* 1 cup mayonnaise

PREPARATION:
Potato Salad Recipe Directions:
In a large bowl, combine potatoes, green pepper, and onion. Blend remaining ingredients; add to vegetables. Mix well to combine flavors. Cover and refrigerate.

Chill potato salad thoroughly before serving.
This potato salad serves 6 to 8.

i will tell you our family recipe but you will have to forgive my “measurements”
use the baking potatoes and wash 2 per person that you are serving cut into chunks and boil with 2 eggs per 4 people once the potatoes are soft drain the water off peel and cut up the eggs into small peices add about 1 tbsp real mayo per person 1/2 tbsp sweet pickle relish per person and 1 tsp yellow mustard per person and salt and pepper to taste and stir until most of the potatoes are mashed but leaving some small chunks. Varaitions you can add some diced raw onion add 1/2 paparika add diced raw green pepper or what ever you want and now that ive told you this recipe i think i will make somemyself for dinner tonight
