she’s right, I have made from scratch and the pillsbury ones are just as good. Sometimes I buy the refridgerated precut pillsbury cookies.

In the grocery store by the sugar and baking products are cookie mixes that come in a bag( sealed of course) and they are very simple and all you need are the ingrediants on the bag an cookie sheet or two and read the directions! They are really good actually. They are low cost also.

My mom ran a bakery out of her house when we kids were little, so she could stay home with us. I picked up her love for baking. Here are a couple of our family recipes for the cookies you asked about. I use them all the time for my son and hubby (just made the oatmeal ones with fresh apples on Sunday, and make the sugar every year as cut-out christmas cookies).
For the Oatmeal cookies:
Cream together,
1 cup butter, softened
1 cup sugar
1 cup dark brown sugar, firmly packed
2 large eggs
2 teaspoons vanilla
1 tablespoon cinnamon
until they are all fluffy. Stir in;
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
Finally, fold in;
3 cups oats (not instant)
1 1/2 cups raisins, or chopped apples
Using a tablespoon, scoop dough onto a greased cookie sheet and press flat. bake at 350* until the cookies are golden brown (about 12 minutes or so).

The easiest thing for “sugar cookies” I make are actually a shortbread. Shortbread is wonderful because it’s so simple, and has very limited ingrediants. The most important thing when baking them is quality. Use REAL butter if you can, and you will not be sorry. Make sure your flour is fresh, too.
1 cup butter
1/2 cup sugar
2 1/4 cups flour
1 teaspoon vanilla extract
Mix together all ingrediants, scoop out onto a cookie sheet, and press flat (these have so much butter, it really makes no difference if you grease it or not), bake at 350* until edges are golden brown. You can sprinkle them with extra sugar to make them more “sugar cookie” like, or, my favorite, throw the dough in the fridge until it’s nice and hard, then roll it out and make cut-out cookies with cookie cutters to decorate after baking.

2 whole Large Eggs
1 cup Canola Oil
2 sticks Butter, Softened
1 cup Sugar, Plus Extra For Sprinkling
1 cup Powdered Sugar
1 teaspoon Vanilla Extract
4 cups Plus 2 Tablespoons, All-purpose Flour
1 teaspoon Salt
1 teaspoon Baking Soda
1 teaspoon Cream Of Tartar
Preheat oven to 350 degrees F.
In a large mixing bowl, cream together eggs, oil, butter, sugars, and vanilla.
Add remaining ingredients and mix well. Cover and refrigerate dough one hour.
Using a cookie scoop, drop balls of dough onto an ungreased cookie sheet.
Smear a dab of butter all over the bottom of a glass, then dip the glass in granulated sugar. Use the glass to flatten each ball of dough, dipping again into the sugar each time. Repeat until all are flattened.
Bake for 9 to 11 minutes, until cookies are just barely turning brown. Don’t overbrown!

Total Time: 1 hour 30 min
Makes: 3 dozen cookies
1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
2 tablespoons Gold Medal® all-purpose flour
1/3 cup butter or margarine, softened
1 egg
1/4 cup sugar
1 teaspoon ground cinnamon
Betty Crocker® red and green decorating icings
1. Heat oven to 375°F. In large bowl, stir cookie mix, flour,
butter and egg until dough forms.
2. Shape dough into 1-inch balls. In small bowl, mix sugar and
cinnamon. Roll balls in sugar-cinnamon mixture. Place 2 inches
apart on ungreased cookie sheets.
3. Bake 11 to 12 minutes or until set. Cool 1 minute. Remove from
cookie sheets. If desired, roll tops of warm cookies in additional
sugar-cinnamon mixture. Cool completely, about 20 minutes.

Matcha/Earl Grey Tea Sugar Cookies

The other day I was in the mood for some basic sugar cookies. I looked online for a recipe with a twist and found Apartment Therapy’s Earl Grey Tea Cookies.
These are simple to make, yet beautifully flavoured to make your sunday morning that much lazier. Try it yourself; you can substitute the earl grey tea for practically any other powder flavour of your choice. I used about 2 teaspoons of green tea powder to make some light tasting matcha cookies.
Ingredients
1 cup all purpose flour
1/4 cup sugar
1/4 cup icing sugar/confectioners’ sugar
1 tablespoon Earl Grea tea leaves – open up a teabag and the leaves in there can suffice as well
1/4 tsp of salt
1/2 tsp vanilla
1 tsp water
1/2 cup unsalted butter
Recipe
1) Mix flour, baking powder, green tea powder/earl grey tea, salt together in food processor to pulverize the tea leaves. If using a teabag, the leaves may be small enough so simply mix well.
2) Cut butter in small pieces. Add butter, vanilla, and water to the food processor and pulse until a soft dough is formed.
3a) Lightly flour a clean surface and a rolling pin – use some more icing sugar if you don’t want the flour to further firm the dough.
Roll the dough to about 1cm thick. Use your favourite cookie cutter to make different cookie shapes.
3b) Alternately, form the dough into a roll or square log. Wrap with plastic and put in refrigerator for about 30min. to make the dough firmer.
3c) After it’s chilled, cut the log into about 1cm pieces. If you have a cookie stamp like in the photo above, brand your cookie!
4) Bake in oven at 375F for about 10-12min.
