Q&A: Does anyone know a nice and simple potato soup recipe?
Can anyone provide me with or point me to a simple potato soup recipe that doesn’t involve crock pots or pressure cookers, can just be made on the stove top? I’m looking for a plain recipe that does not involve bacon and croutons and herbs and blah blah blah. Something the gourmet folk would probably frown on icon smile Does anyone know a nice and simple potato soup recipe? Thanks.

my mom just cut potatoes and boiled them until they had the consistency of a soup..it was always good

Bearcreek brand has soup mixes that are fabulous tasting. The potato soup mix you add 8 cups of water and bring to a boil, then simmer.

Add salt and pepper to taste. Sprinkle a dash of shredded cheddar cheese in your bowl.

I have made this soup along with a pot of homemade chili for various get togethers and it’s always a hit.

boil potatos in water till there soft add one can of cream of chicken soup a little salt and pepper to taste

2 tbsp Olive oil
2 Onions, chopped
2 garlic cloves, chopped
1 tsp fine sea salt
3 large, floury Potatoes, peeled and roughly diced
500ml water, or vegetable stock
Pepper

1. For the soup base; gently heat the oil in a saucepan and add the onions, garlic and salt. Turn the heat down very low and cover the pan with a lid. Cook for about 10 minutes.

2. Add the potatoes to the pan and pour over about 100ml of the measured water and bring to simmering point.

3. Cover the pan and simmer for another 20 minutes, or until the potatoes are tender. Check occasionally to make sure all the liquid hasn’t evaporated. If it dries out, add a little water to moisten.

4. When the potatoes are tender to the point of falling apart, add about 400ml of water and heat through. Puree the soup in a liquidiser or make a coarse puree with a potato masher. Season to taste and serve.

potato chunks, chopped celery, diced carrots, chickn or roast beef or bacon chunks, white onion chunks, broccoli chunks, salt , pepper,
adds:
tyme, bay leaf (removed when potatos cooked) or a little fresh garlic to taste, or — a little cumin to taste with salt no pepper with some cooked green lentils.

drop the food into the large pot, add 4x the water and slowly bring to boil. then let bubble lightly until it looks like you want it to look. add spices when the water turns thicker. add salt when there is about 10 minutes left to cook.

cook the potato chunks in a micro wave and add them to the pot last if you want the water to be clear and not thick.

if you want a fatty winter tasting soup, save clean, raw chicken, pork or beef bones (with meat and fat attached to them) and boil them for about 45 minutes and use the water to make soup with.

when done add a dollop of sour cream or mayo on top in bowl

Herbed Potato Soup

INGREDIENTS
2 medium potatoes, peeled and diced
2 cups water
1 large onion, chopped
1/4 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon pepper
1 1/2 cups milk

DIRECTIONS
Place potatoes and water in a large saucepan; cook over medium heat until tender. Meanwhile, in another saucepan, saute onion butter until tender. Stir in the flour, salt, thyme, rosemary, and pepper. Gradually add milk. Bring to a boil; cook and stir for 2 minutes. Add potatoes with cooking liquid; heat through.

POTATO CHEESE SOUP

4-5 large potatoes
1 cup sour cream
2 cans cheddar cheese soup
2 1/2 cups Milk
Salt and pepper
Beef bouillon
Garlic powder

Peel and cut potatoes into cubes. Boil potatoes until soft and drain potatoes. With potatoes in pan add soup and sour cream. Gently mix until blended. Add milk into potato mixture until combined liquid barely covers potatoes. Add salt, pepper, beef bouillon, and garlic to taste. Heat on medium heat until soup is warm enough to eat.
DO NOT BOIL.

Saltine crackers are a good compliment to this soup.

POTATO SOUP

6 slices bacon, pancetta or other pork
3 lbs. potatoes
2 tsp. salt (or to taste)
1 cup sour cream
1 stick butter
2 1/2 cups milk
2 tablespoons heavy cream
1/2 tsp. white pepper
2-3 green onions, chopped
2 tablespoons chives (optional)
1 small leek, finely chopped
3 cloves garlic, minced
1/2 cup shredded Cheddar cheese (optional)

Slice the meat into 1/4 inch pieces. Carefully wash and chop the leeks, discarding the top few inches (the toughest green part). Peel and mince the garlic. Slowly sauté these ingredients in 1 tablespoon butter. Place in skillet on low heat for 5-10 minutes, then on medium-high until golden and crisp. (Add garlic last and do not allow to brown).
Wash, peel and slice potatoes into quarters. In a saucepan cover potatoes with water and bring to a boil. Add 2 teaspoons salt to water and reduce heat to a simmer, continuing to cook until tender (about 40 minutes). Drain and return potatoes to saucepan, mash potatoes in the still-hot pan while adding chunks of the butter.

When the butter melts, stir in the sour cream. Pour in the cream and milk; add salt and pepper to taste. Sprinkle with chopped chives and/or scallions, and optional cheese, if desired.

HEART WARMING POTATO SOUP

8-10 large potatoes, peeled, cubed
2 cans Campbell’s Cream of Celery Soup
2 cans Campbell’s Cheddar Cheese Soup
1 large onion, diced
salt
pepper, to taste
bacon bits (optional)

Cut potatoes into 1″ to 1 1/2″ cubes and add to boiling water. Add salt to water. When potatoes are half done, add onion and the cans of Cream of Celery Soup, and Cheddar Cheese Soup. Cook on medium heat until potatoes are tender.
Reduce heat and simmer until desired thickness occurs. If thickening is taking too long, a small amount of instant potatoes may be added. Be careful not to add to much so that it doesn’t get too thick.

Serve with or over cornbread and sprinkle with bacon bits. Season with salt and pepper to taste

OR

SOUTHERN POTATO SOUP

potatoes, boiled and drained
1/2 pack of bacon, fried
1 large onion, chopped
1/2 galllon whole milk
2 tbs cornstarch (optional)

Boil potatoes, drain and rinse under water – fry bacon in the pot you plan to cook soup in. Remove bacon, set aside and add onion. Cook until tender. Pour in milk.
If you want a thicker soup, add 3 tbs of cornstarch in a separate container, combine with milk and stir until thick, then and add the rest of the milk.

OR

CREAM OF POTATO SOUP

8 or 9 potatoes
2 onions
yolks of 2 eggs
1 c. rich cream
salt and pepper to taste
peas or corn, optional

Boil together potatoes and onions. Mash thoroughly in their own liquid. Season with salt and pepper.
Beat yolks in rich cream and stir into potatoes.

Do not allow soup to boil but cook until eggs are slightly cooked.

Cooked peas or corn may always be added if desired.

OR

POTATO SOUP

6-8 potatoes
2 cans cream of celery soup
2 cans cream of onion soup
8 oz. shredded Monterey Pepper Jack cheese
1 pint half & half
3 cans chicken broth

Cut 6-8 potatoes and boil in chicken broth until tender. Add all other ingredients and heat and stir until hot. Lastly, add the cheese and continue to stir until it has melted.
