Day002 – Bread

One of my favorite treats is homemade bread. Fresh and warm out of the oven with some butter on top. What could taste better?
But the carb content is a challenge for me because of diabetes. I want to eat a loaf of warm bread, but I couldn’t take enough insulin.
Perhaps this is one of the times when having diabetes is a blessing. Because eating too much bread wouldn’t do me any good.
By the way, this is a simple recipe where I can start with ingredients and end up with baked bread in about an hour. I use some whole wheat white flour to reduce the carbs and increase the fiber – it still tastes yummy.
There is no cure for type 1 or type 2 diabetes.

The bread was made with 4 simple & basic ingredients: sourdough starter, white flour & a tiny bit of rye/whole wheat flour, salt and water. I threw in about 3 tablespoons of ground flax seed and dried blueberries for taste. Original recipe @the Fresh Loaf
