If you love the taste of Cheesecake Factory, wouldn’t it be great if you could recreate the flavor of their delicious treats at home?

My personal favorite dessert from there is the pumpkin pie, which would make a tasty treat during the holidays. With so many “copycat” restaurant recipes floating around, it could take months to discover the closest forula to replicate the scrumptious Cheesecake Factory Pumpkin Pie.

Luckily, there has been one chef dedicated to coming as close as possible to the exact recipe, short of getting it from the Cheesecake Factory itself. I have made this recipe multiple times, and each and every time, my husband asked if I was sure I didn’t purchase it from the restaurant. After reassuring him that I indeed used a recipe, I thought I’d share my knowledge with the rest of the world as well.

Cheesecake Factory Pumpkin Pie

1 1/2 cup all-purpose flour1/4 cup cold butter, cubed1/4 cup cold shortening, cubed1 1/2 teaspoon granulated sugar5 tablespoons cold water

3 large eggs, lightly beaten2 cups canned pumpkin3/4 cup packed dark brown sugar1/4 cup granulated sugar2 tablespoons all-purpose flour1 tablespoon molasses1 1/2 teaspoon ground cinnamon1 teaspoon ground ginger1/4 teaspoon ground nutmeg1/4 teaspoon ground cloves1/4 teaspoon salt

1 3/4 cup whipped cream, for topping

Instruction:Mix together flour, shortening, and butter by hand until it looks like small crumbs. Add water and toss until well mixed.

Roll the dough into a ball, then knead for about 30 seconds. Dust the dough with flour, wrap in plastic wrap, and let sit in the refrigerator for a minimum of 1 hour.

Roll out the dough into an 11 inch circle, then place it on a 9″ pie plate. Trim off all except for 1 ” of the excess dough around the sides. Fold this excess under the crust and pinch to seal. Poke bottom of the shell with a fork, and then refrigerate for 1 hour.

Weigh down crust with weights or beans, and back in the oven on 375 degrees for 15 minutes. Remove weight after 10 minutes.

Mix remaining ingredients together and pour into crust. Bake at 375 degrees for 40 minutes, or until set.

Serves: 4

2/3 cup whole milk
2/3 cup heavy cream
1/2 cup sugar
1 large egg
1 large egg yolk
1/3 vanilla bean, split lengthwise and seeds scraped, pod reserved for another use
4 (1-inch-thick) slices brioche, preferably day-old
3 tablespoons unsalted butter, plus more for the pan
2 Golden Delicious apples, peeled, cored, and cut into eighths
Crème Anglaise, optional
Caramel Sauce, optional
Confectioners’ sugar

Whisk together the milk, cream, sugar, egg, yolk, and vanilla bean seeds until the sugar dissolves. Arrange the brioche slices in a single layer in a shallow baking dish. Pour the milk-egg mixture over the bread, submerging the bread. Cover with plastic wrap and refrigerate until the bread is completely soaked and almost too soft to handle, at least 1 hour and up to overnight. When you’re almost ready to serve, preheat the oven to 400°F. Generously butter a small rimmed baking sheet. Arrange the apples in a single layer. Dot the apples with 1 tablespoon of the butter. Roast until golden brown and tender, about 10 minutes.

Meanwhile, melt the remaining 2 tablespoons butter in a large ovenproof nonstick skillet over medium-low heat. When the butter foams, use both hands to very carefully transfer the soaked brioche slices to the pan. Cook until golden brown, about 5 minutes, then carefully flip. Transfer to the oven and bake alongside the apples until golden brown and puffed, about 5 minutes. Serve the French toast with the apples and the crème anglaise and caramel, if desired. Dust with confectioners’ sugar.
