We spent New Year’s in the mountains and partied a bit too hard with our friends Peter and Patrice. Though I did not drink a drop of alcohol, I somehow ended up with a contact hangover. Everyone around me was imbibing and I must have become intoxicated by association.

As part of my “post holiday” status, I will be baking and sharing recipes that are not dessert until the urge to bake sweets returns. Of late, several people have asked me for my bread recipe. I am satisfied with it though not thrilled. It seems though, that so many people are in need of a quick and easy gluten-free bread that it is time to divulge mine. May be good for hangovers.

Just a simple, fast, tasty, chicken dish.

- 400 g honey marinated chicken strips
- 1 onion
- 2,5 dl cream
- 1 can of canned mandarin
- water, sweet chili sauce, curry, paprika, salt

Brown the chicken strips in some olive oil. Add in the sliced and peeled onion and fry for a minute or so. Add curry, paprika spice, salt, cream and about a tbsp of sweet chili sauce. Finally throw in the canned mandarin and boil for a while.

So the cake.

I had two goals for Sosie’s first birthday. Make formal invitations to her party and make her birthday cake. The invitations were easy. Shutterfly is my slave. The cake was wee-bit harder.

Jolene was thoughtful enough to send me a great cake decorating book for recipes and ideas. My mom helped me determine what kind of tools I would need and I purchased all of them online in plenty of time to practice for the big event. I even went as far to make a practice cake for my Dad’s birthday on the Tuesday before Sosie’s Saturday party. The cake looked good, but tasted terrible. B told his Mom about it and she sent me her recipe for white cake (an award winning recipe at that.) I took two days off of work to prep for the party. On Thursday I baked the cookies, whipped up icing, and ran a few party errands. On Friday morning, I was ready to begin baking.

I mixed up the four cakes needed to make the two tiers on Friday morning. Baked them, cooled them, and then watched as they would NOT come out of their pans cleanly. Disaster. I called Jame to ask her advice and she tried to steer me in the right direction. Should we use cake flour? Should we sift the flour? Should we use butter? Shortening? So many turning points where I obviously went wrong.

My mom and I loaded all of the yummy but crumbling cake bits into a tupperware container and started again. Except I needed more flour and sugar and other party foods. So I went grocery shopping, came home around dinner time, and started the "third" cake.

Which stuck to the pans.

At this point my mom was begging me to buy a store cake, B was making his OWN chocolate cake for Sosie’s birthday (because at least one parent was going to produce a homemade birthday cake for this baby’s first birthday), and pretty much no one in the house was speaking to one another.

B and I talked through the recipe. We decided the problem was probably the fact that I was using an electric mixer instead of hand beating it. The chemistry was all off. I felt like my karma was all off.

So I went back to the cake baking book. I picked a different white cake recipe. Around 9pm I started my fourth cake. I beat all ingredients by hand. I greased the HELL out of those cake pans. And the cakes *pretty much* came out. A little frosting glue and no one would ever know. I wrapped them in plastic wrap, froze them, and started to work on coloring my icings.

It was midnight.

I sent my Mom to bed– she had been sitting at the dining room table, cutting up fruit, preparing the pie crusts for the quiches, and just worrying about my sanity level. I was so determined. I had crammed for hundreds of exams in the wee hours of the morning… none of them ever felt as important as this cake.

I finished the layering and the filling and the icing at about 4am. The cake was decorated with cookies and flowers. The kitchen was clean. I spun the cake around slowly and was amazed. I had made this cake. It was a little wobbly, a little tilted, and a little silly– but it was all mine.

And the next morning, it was all Sosie’s.

The dress she wore to her party that day still has some of the pink frosting from the cake on it. I can’t bear to clean it. I loved the look on her face as she dove into the cake. Licked the frosting. Bit into the cookies. Smeared the icing in her hair. If she could have asked me to stay up and make her ANOTHER birthday cake that night, I would have. It was that simple. It was all worth it. And then some.

About a year ago, I picked up The Accidental Vegetarian by Simon Rimmer from the bargain bin at Barnes and Noble and have been awfully pleased with it.

Well, that is to say , all the recipes SOUND really good and the photos are great, but we’ve only actually made one recipe from it up until now – Morroccan Spaghetti, which we loved.

This week, I knew I was going to be in a hurry, so I decided to take a shot at a "Simple Tomato Tart".

It definitely is simple, you have to give it that – sliced plum tomatoes on puff pastry with salt, pepper, melted butter and a litte sugar to help it caramelize in the oven.

We were pleased-ish with it. I think this dish is only as good as its tomatoes and it IS January, after all. It would be really nice next summer with some awsome fresh tomatoes, but the combination of the plum tomatoes and the sugar made it taste a little spaghetti sauce-y. Next time, I would skip the sugar and raise the temperature of the oven to give the tomatoes more caramelization.

We served it with a lime/roasted peanut coleslaw that worked really well with the pastry/tomato flavors of the tart.

(On the plus side – I got to try the trick of skinning the tomatoes by cutting a small cross in the sharp end, blanching them in boiling water for 30 seconds, then plunging them into an ice bath. I’d always wanted to try that and it worked really well!)
