From inventive breakfast-for-dinner dishes and meatless Monday vegetarian recipes—both weekly traditions in Giada’s house—to picnic sandwiches and hearty salad recipes for reinventing leftovers, Weeknights with Giada reveals every secret in her repertoire. Even the desserts are quick to mix and bake, should a craving—or a last-minute school bake sale—strike.
Here is Giada at her most inventive—and at her most laid-back. Flavor, freshness, and fun take center stage while cooking times, pots dirtied, and stress are kept to a minimum. Featured Recipe: Sweet Corn and Basil Lasagna

No-boil noodles and a food processor are what make this lasagna a weeknight-dinner friend. Both help to put a super-creamy, provolone-cheesy, comforting, and downright amazing pasta dish on the table for the family. One tip to minimize clean-up and avoid hand-grating the cheese: use the shredding attachment of the food processor to grate the provolone first. Then, without having to wash the bowl, you can switch to the blade to make the sweet corn and basil filling. Smiles all around!

PIZZA DOUGH (QUICK AND EASY)
2 pkg. rapid rise yeast
2/3 c. warm water
1 tsp. sugar
1 tsp. salt
4 c. flour
1 tbsp. sugar
3 tbsp. olive oil
2/3 c. warm water
Preheat oven to 350°F.
In a small bowl, mix first 3 ingredients. Let stand for 5 minutes until foamy.
In a large bowl, combine salt, flour (no need to use the full quantity – use enough flour to make a stiff dough), sugar oil, and the second 2/3 cup of warm water.
Mix together yeast and flour mixture and knead on a lightly floured surface until smooth and elastic.
Place dough into an oiled bowl and turn once to coat with oil. Cover and let rise until doubled in size (about 45 minutes to 1 hour).
Sprinkle a pan with cornmeal or semolina flour. Press dough out with your fingertips (or roll out) into a circle (or use a square cookie sheet for Sicilian style pizza).
Brush with olive oil and spread with your favorite toppings (pizza sauce, mozzarella and Parmesan cheese, pepperoni, mushrooms, peppers and onions are a few suggestions).
Bake at 350°F-400°F for 15-20 minutes or until edges are golden and lightly browned in spots and cheese is melted and bubbly.
Makes 1 large pizza.

I’ve been making this one for years
If you have a food processor, this will take about 5 minutes
3 cups bread flour (all purpose ok if you don’t have bread flour)
2 teaspoons salt (sea salt)
1 heaping teaspoon yeast (or you can just use a package even though thats a bit more than you need but I buy my yeast in bulk so I just use a heaping teaspoon active dry)
Mix the above 3 with a few pulses of the food processor or with a fork in a bowl
Mix 1 1/4 cups luke warm water and 2 tbs olive oil in a measuring cup
Pour the oil/water into the feed tube of the processor with the motor running. Process for about 20-30 seconds. Or, sprinkle the oil/water slowly over the flour/salt/yeast until it comes together (use your hands as it’s easiest)
Dump onto a board or countertop that has been dusted with flour and knead about 40 times.
put some olive oil on your hands and rub the dough so that it has a light film of oil on it.
Put the dough into a baggie or bowl with a cover and let rise for 1 hour
Move dough to refrigerator for best results for overnight yeast activity
Remove dough 2 hours before you need it to let it warm and rise
—note— I highly recommend making pizza dough the day before you need it (or 2 days before). the extra time gives the yeast time to create a lot of flavor.

After looking for a good pizza dough recipe for years this ended up being my favorite, so simple and fast.
2 Tbsp yeast
1 cup warm water
1 Tbsp sugar
2 cups milk
1 cup Crisco shortening
2 eggs
1 1/2 tsp salt
enough flour to make a soft dough
Mix ingredients as you would any yeast dough but don’t let rise. It rolls out easier if you let it sit for a few minutes.
Roll it out thin and pierce with a fork so it doesn’t bubble and pre cook the shell for a few minutes. Brush lightly with Olive oil before putting sauce on. Place all your toppings on and cook as usual. (I cook at 350 and leave it in a little longer, but that’s a personal preference)
This turns out nice and crispy and any leftover dough freezes well.
